A Repost Blog with ginger cookie recipe!

I know this is a re post so early into this new blog, but I thought I'd re post a recipe for the holidays.   And I was feeling a little nostalgic (and perhaps sappy too) and went to read some old blogs.  Anyways, I hope you enjoy and I will give some new material soon.

I'm just a sappy romantic who bakes

I can't help it.  I LOVE a  good romantic comedy.  Or even a bad one.  Just give me the sugar coated Hollywood version of love. 

*SIGH*  

So the man is at a conference and I am having a girly nite.  Complete with a love story movie, homemade candied ginger molasses cookies and a big glass of chai tea. 

The little kids are in bed.  The big ones are up keeping me company. 

So these cookies:
3/4 C Butter
1 C Sugar
3/4 C Molasses
1 Egg
2 C Flour
1/2 tsp Allspice
1/8 tsp Ginger
1 tsp Cinnamon
2 tsp Baking Soda
1/2 tsp Salt
3 1/2 oz of crystallized ginger, coarsely chopped

Beat butter, sugar, molasses and egg until smooth.  Sift dry ingredients together in separate bowl.  Add the dry to the wet mixture.   Mix well and add crystallized ginger. Stir until mixed.   Chill for 1 hour.  Form dough into 1 inch balls and roll them in granulated sugar.  Bake on a cookie sheet for 8-10 minutes. 
This is a modified version of the original that I found on the back of a package.   The original calls for clove instead of allspice.  And the powdered ginger in the original is 1/2 tsp.    I believe it would be way spicier.  (sp?)   But as luck would have it I did not have any ginger or cloves in the house.  So improvisation had to be done!  And the results were marvelous!!! (If I do say so myself!) 

So bake some up.  Put on a sappy movie and lose yourself in the moment.
